French Salad with Indian Mint Dressing

Recipe by my hubby Murali


1.Lettuce - One bunch - Chopped
2.Grated Carrots - 2 Medium size
3.Cucumber -2 Medium sized (cubed)
4.Yellow/Red/Orange/Green Bell Pepper (Any or All, cubed, fried with little olive oil (1 tea spoon) on high heat for a minute)
5.Olives - Chopped - 2 tablespoon 
6.Tomatoes - 2 Medium Sized cut in to cubes
7.Apple - Cut it to Cubes
8.Pine Nuts and Walnuts - 1 table spoon (dry roasted and crushed)


 9. Mint leaves - 1 bunch
10. Green Chilly - 2
11.Coriander leaves - 1 cup
12.Olive oil - 2 table spoon

  1. Dressing: Grind Mint leaves, green chilies and coriander leaves with little water into thin smooth paste, add Olive oil and mix well. Store in refrigerator for few minutes. 
  2. In a large bowl, mix all vegetables and apple (1 to 7), 
  3. For crunch, you can add Nuts (8)
  4. Add 2 tablespoon of mint dressing.
  5. Add salt and pepper as per the taste.
  6. Garnish with salad cream.(optional)

*Grated radish can be added if desired.
